Charlotte de Witte releases new soy sauce with “a strong connection to Belgian culture”

Belgian techno DJ and self-proclaimed lover of food Charlotte de Witte has released a new soy sauce, ‘Tears of Soy’.

The sauce is a collaboration with Dutch brewery Tomasu, which describes itself as “the first and so far only microbrewed soy sauce in Europe.”

Announcing the news on Twitter, de Witte wrote: “People who know me well know i have a slight addiction for soy sauce. It’s ion a very coincidental and spontaneous way that a couple of years ago, i got in touch with the people from Tomasu.

“Together we have created a hop based soy sauce. A premium product that has a strong connection with the Belgian beer culture and Belgian heritage,” she continued.

Considered to be one of the world’s oldest condiments, the origins of soy sauce dates back to 500 B.C. in China, and is much loved and consumed across East and South East Asia.

A single 200ml bottle of ‘Tears of Soy’ costs €25 (£22). For comparison, a 250ml bottle of premium Japanese soy sauce Kikkoman will set you back roughly £2.

Describing the process of developing the soy sauce with de Witte, Tomasu wrote on its website that “Charlotte turned out to be rather specific when it comes to flavors. That directed us into the world of hop.

“Next to hop being an interesting combination between freshness and delicate bitterness… it’s also quite a cool link to Charlotte’s Belgian roots,” it continued.

In the end, the manufacturer claims that it narrowed down its choice of hop to “a variety known for its prominent floral tones, with elements of citrus and notes of grapefruit.”
